Super Summer Specials: Summer Cocktails


Welcome back to my blog!! Today's post is another installment of Super Summer Specials, this time we are covering 7 cocktail recipes that are perfect for summer. Hope you enjoy :)

 

Peach Rosé Sangria

Ingredients

1 bottle Rosé wine ½ cup peach liqueur 1 cup peach juice I used white peach juice 1/3 cup simple syrup see note 3 sliced peaches I used white peaches 1 cup sliced strawberries and/or raspberries Instructions

In a carafe or pitcher, combine wine, liqueur, juice, and simple syrup. Adjust to suit your taste. Add fruit and refrigerate for several hours. Serve chilled, over ice. Notes To prepare simple syrup: combine ½ cup granulated sugar and ½ cup water in a small saucepan. Bring to a boil and stir until sugar has dissolved. Chill. Any leftover simple syrup can be stored in the refrigerator and used in coffee or tea

 

The Maui Moscow Mule

Ingredients

1 1/2 ounces KINKY Pink vodka liqueur 1/2 ounce vodka 1/2 ounce fresh lime juice 3 ounces hard ginger beer Crushed ice Lime wedges for garnish Cubed mango for garnish Blue Crushed Ice Liquid butterfly pea flower extract Cold water Instructions

In a cocktail shaker filled halfway with crushed ice, combine KINKY vodka, KINKY liqueur, and lime juice. Shake for 30 seconds. Fill a clear mule mug with crushed ice. Strain vodka mixture into glass. Top with hard ginger beer. Add a layer of crushed blue ice. Garnish with fresh mango and lime wedges. To make the blue ice: add 4-5 drops of liquid butterfly pea flower extract to each ice cube square in a tray. Fill with water & freeze. Crush ice and layer on top of drinks, and watch the magic happen!

 

Strawberry Pineapple Mojito

Ingredients 4 limes, cut into wedges 8 strawberries 1 bunch mint, tough stems removed 4 tablespoons sugar 6 ounces pineapple juice 6 ounces light rum* 2 cups club soda Instructions For each cocktail, muddle 3 lime wedges, 2 strawberries, 1 tablespoon mint leaves and 1 tablespoon sugar in a cocktail shaker until lightly crushed. Stir in pineapple juice, rum and club soda. Serve over ice, garnished with remaining lime wedges, if desired. Recipe Notes *Additional pineapple juice can be used for the rum as a non-alcoholic substitute.

 

Blackberry Mojito

Ingredients 1/2 cup blackberries 2 tsp fine (berry) sugar 4 medium fresh mint leaves 1/4 cup lime juice 3 oz. white rum 1/2 cup club soda Instructions Muddle blackberries, sugar, and mint together, breaking down the blackberries and dissolving the sugar. Add lime juice and rum to blackberry mixture, stirring to combine. Divide between two glasses and top with club soda. Top with lots of ice (crushed is usually more traditional in a mojito, but ice is ice!).

 

Mai Tai Cocktail

Ingredients

6 ounces pineapple juice 4 ounces orange juice 3 ounces spiced rum 2 ounces coconut rum 1/2 ounce Cointreau or Triple Sec splash of grenadine ice pineapple wedge, for garnish maraschino cherry, for garnish Instructions

Combine pineapple juice, orange juice, rum, and triple sec in a cocktail shaker and shake to mix. Pour into a glass over ice and top with grenadine. Garnish with pineapple and maraschino cherries.

 

Frozen Strawberry Margarita

Ingredients

1 pound frozen strawberries 12 oz frozen limeade concentrate 1 cup tequila 1/2 cup triple sec 8 oz fresh strawberries Simple Syrup to taste

Instructions

Add all of the ingredients to a blender Blend until smooth Add simple syrup to taste if desired

 

Strawberry Moscow Mule

Ingredients

12 strawberries, roughly chopped 4 sprigs fresh mint 3/4 cup vodka 2 limes, juiced 12 oz ginger beer Instructions

In a pitcher muddle together strawberries and mint for about 2 minutes, until strawberries are very juicy. Add vodka and lime juice, and mix to combine. Divide into 4 glasses that are filled with ice. Top with ginger beer to serve. Garnish with mint leaves and lime wedges if desired.
