Super Summer Specials: Easy Freezer Dinners

Welcome back to another installment of Super Summer Specials!! Today is all about Make ahead dinners. These are awesome if you are gone all day at work and have no clue what you are having for dinner.

Taco Kit
1lb beef (cooked with taco seasoning and completely cooled)
Soft shell wraps 5-10 (depending on how many people you need to feed)
1-2 cups shredded cheese
Put the cooled taco meat in either a bag of that's what you use or a container. Also add the cheese to another bag/ container. Finally add the tortillas to the parcel and place in freezer.
*Make sure to have the rest of your condiments on had if this is for dinner* Also if you like hard shells just place a sticky note on bag/container reminding you to get hard shells.
Meatball Subs Kit

Subs (or buns of choice)
Fully cooked and cooled meatballs
Marinara sauce
Shredded mozzarella cheese
Place each item in a bag or container and place in freezer
Chicken Quesadilla
diced or shredded chicken ( can be prepared before in slow cooker)
shredded cheese
Tortillas
Place all ingredients in separate bags/containers and place in freezer.


Chicken Enchiladas
Ingredients
2 cups chicken cooked & diced 10-12 flour tortillas 2 cups cheese enchilada sauce 14 oz can – any flavor optional: 1 cup sour cream optional: diced green chilies
Enchilada Sauce for Chicken Enchiladas Instructions Mix together your cooked chicken, 3/4 of your enchilada sauce, and 1 1/2 cup of cheese in a bowl (save the extra sauce and cheese for the topping). Add in any other of the optional extras, like sour cream or dice green chilies. Add a spoonful or 2 of your mix to the center of the tortilla. Spread it down in a line in the center of the tortilla. Roll up your tortilla and place it in a baking dish. When all your enchiladas are wrapped, pour the extra sauce over them and sprinkle the cheese.
Put saran wrap and tin foil over baking dish/or lid if it has one. Then place in freezer.
When ready to eat it: Preheat your oven to 350 and bake your enchiladas for 15-20 minutes or until the cheese is melted and starting to brown.
*You can easily make this into one person meals and freezer five or six meals, of course this depends on your freezer space*
Brown Sugar and Garlic Pork Loin Slow Cooker Freezer Prep

2 lb pork loin
4 tsp minced garlic
4 tbsp brown sugar
1 tsp salt
1 tsp pepper
5 tbsp vegetable oil
Put all ingredients in freezer bag. And place in freezer.
Cook in slow cooker for 6-8 hours on low or 4-6 hours on low.
You can add potatoes and carrots to the slow cooker as well and have a complete meal.
Freezer-Friendly Turkey-Cheddar Burgers

Ingredients
3 pounds ground turkey 1 small onion, chopped 1 Tablespoon soy sauce 1 Tablespoon Ketchup 2 cloves garlic 6 oz (1.5 cups) grated cheddar ground pepper, to taste Instructions
Combine all ingredients in a large bowl. Shape turkey burgers into 12 quarter-pound patties or 16 patties at just under 1/5 pound each. Use your thumb to make a small indentation (this keeps the burgers flat when they cook). Grill as you would any hamburger and serve on a bun with your favorite fixings! (Make sure your burger heats to at least 160 degrees Fahrenheit. Under-cooked meat can cause illness.) To Freeze: Place burgers on cookie sheets covered in parchment paper/ silicone baking mats and freeze flat for several hours. Remove to a gallon freezer bag/ container for long-term storage.
Mushroom Barley Stew: Slow Cooker Freezer Meal

1 pound mushrooms
2 sliced carrots
1 sliced celery rib
1 diced onion
15 ounce can diced tomatoes
1 cup uncooked barley
Place all ingredients in a bag/container and place in freezer.
Extra instructions: add 2 quarts vegetable stock to the slow cooker before cooking
Cook time: 8 hours on LOW Serve with: hot, crusty bread or rolls Serves 4-6
*You can certainly add your own ingredients to this as well. Want potatoes, add them, make this recipe your own.*
