In today's post I am going to share my new favorite recipe. Since I first tried this I have made two more batches and froze them so I can have quick meals. This recipe is super easy and (as long as you like mushrooms) really tasty.
I found this recipe in Vegan Comfort Classics. It's called See-food Chowder. Now because I could not find the recipe online with a link at all I have included a link to a word document where I have written it out so I can share it. I absolutely love this recipe, so I encourage you to try it.

Pictures above are from my first attempt at this recipe. The first time I made it I could not find shiitake mushrooms so I used cremini's. I also blend the onion and celery in with the cashews because I don't like chunks of them. The second time I made it I used shiitake mushrooms and I roasted the carrots with the potatoes. I found it really good the first time but it was even better the second time I made it.
