Pollo-Pescatarian Meal Planning

In today’s post I will be sharing 8 easy meals, these can be used as lunches or even dinners depending on how you want to prep them. These are either meals I do regularly, or they are meals that are on my to try list. I will be sharing links not typing out the actual recipes, because the recipes are not mine, so I want to give credit to the people that created them. All of these recipes are considered Pollo-Pescatarian as that is the way that I eat now, but recipes can always be modified to fit your needs.


Modified Cobb Salad; make with chicken, choose whether or not you want to use egg. I eat eggs occasionally now so if this was a once every couple weeks meal then I would use an egg.

Super easy and Simple stir-fry; this is something that I make every week usually. I make mine with chicken, shrimp, veggies, and udon noodles (which are my favorite). I always use a mix of teriyaki sauce, soy sauce and chopped garlic. I also add water to my mix but that’s it. I never make it fancy. I have started to add cashews to my stir-fry’s as well, as a different texture.

Taco Salad bowls; I would use ground turkey instead of beef in this recipe;

Baked Salmon with Asparagus; if your not a fan of asparagus, you can always change up the veggies to ones that you like and you can always add potatoes or rice as well;

Pinwheel Snack Lunch; for me I would use turkey bacon but these look really good and I can't wait to try them;

Roasted Chili-Lime Cod; This look delicious and of course you can make it as spicy or as mild as you need to and you can always add more veggies.
